"Thanks in large part to the extraordinary work of Aurélien Laherte and his family since 1889, heads are turning toward the village of Chavot in the Côteaux Sud d’Epernay, a sub-region sandwiched between the Côtes des Blancs and the Vallée de la Marne.

As a meticulous vinifier and a devoted practitioner of organic and biodynamic viticulture, Aurélien strives to produce a lineup of blended and single-vineyard Champagnes that deeply expresses the identities of his unique terroirs. "This innovative blend of 60% macerated Meunier, 30% immediately pressed white Meunier, and 10% still red Meunier is downright gulpable. Primary fermentation takes place in foudres and the wine goes through partial malolactic fermentation. Rosé de Meunier is dosed at 2.5 gr/l."
