"Our farming philosophy is based on our acceptance of the fact that man will never be able to understand nature’s full complexity and interactions. We therefore choose to concentrate on observing and learning the movements of Mother Earth in her various energetic and cosmic passages and prefer to follow her indications as to what to do, instead of deciding and imposing ourselves. Consequently this has taken us to possibly avoiding all treatments on the land we cultivate, wether homeopathic, organic or biodynamic. Accepting and following nature is our guideline as the divine ability to understand the ‘Whole’ was obviously not given to man as we are only a part of this complex and not God himself."

About the cuvee:

"A rich and fragrant wine of pure Nerello Mascalese from different vineyards, partly from our best parcels where we produce our crus (Zottorinoto-Chiusa Spagnolo, Feudo di Mezzo-sottana and Porcaria) as well as designated vineyards for this specific wine (Rampante sottana, Piano Daini and Crasà). A classic, traditional Nerello Mascalese with tannins and sweetness of ripe fruit. My vision of a traditional, balanced and rich Northern Valley Etna wine."

Made from fruit coming from vines with an average age of 50 years, which is destemmed and fermented by native yeasts with a maceration period lasting around 50 days. It is then pressed and aged in neutral vessels for 12 months prior to bottling.

Grapes are destemmed and lightly crushed, fermentation started with pied-de-cuve using only indigenous yeast and skin contact for about 50 days, élevage takes place in neutral epoxy tanks from 2500 liters to 7000 liters and lasts 12 months. Bottling with no fining, light flitration.
