Corollary Wines is dedicated to exploring the terroir of Oregon’s Willamette Valley and its expression in traditional method sparkling wine. Cuvée One brings together multiple soil types, grape varieties, and climates to create a multi-layered, nuanced wine. This uniquely Oregon brut blend unites six very special vineyards:
- 27% Lonesome Rock pinot noir (Coast Range, Willamette Valley AVA)
- 14% Winter's Hill chardonnay (Dundee Hills AVA)
- 17% X-Omni chardonnay (Eola-Amity Hills AVA)
- 11% Twelve Oaks pinot meunier (Chehalem Mountains AVA)
- 11% Cattrall Brothers pinot noir (Eola-Amity Hills AVA)
- 11% Namaste chardonnay (Van Duzer Corridor AVA)
- 9% Winter's Hill pinot blanc (Dundee Hills AVA)
Separate base wines were made from each vineyard.
The final blend is 42% chardonnay, 38% pinot noir, 11% pinot meunier, and 9% pinot blanc.

Each base wine was whole cluster pressed and settled overnight. Afterward, the wines were fermented with Quartz yeast in neutral oak. Base wines remained on the lees for nine months. After blending the wine spends 30 months on the lees before disgorgement.
