"In the Columbia River Gorge, behind a peach orchard located just below the Stonehenge Memorial in Maryhill, WA, grows the Waving Tree Vineyard. This family owned and operated vineyard dates back to 2001.

We are excited to release our first Nebbiolo. When Redolent first began we had an idea of making a true Oregon Nebbiolo and after a number of years of trials and work, we are so proud to release our 2018 Redolent Waving Tree Nebbiolo.

Nebbiolo wants food. This is a wine for the dinner table. You can drink it on its own for sure, but it shines best with ribeye steak, mushroom and/or truffle pasta dishes, all pizza (at least to me), lasagna, sausage, braised duck, braised pork shank, beef tenderloin, and roast turkey. It wants to be on a table full of food.

Aromas of roses, raspberry, fresh tobacco, leather and tar leading into flavors of cherry, plum, fresh tobacco, fennel, and herbs, finishing with a nice tannic grip and lingering cherry and tar."

Grapes were hand-picked and brought directly to the winery in 1/2 ton totes in perfect condition. The wine underwent native yeast fermentation and then was racked into neutral French oak barrels for a 24 month élevage. It was then racked into a stainless steel tank for another 6 month élevage. At that time, it was bottled unfined and unfiltered. Then it was aged in bottle for another year and a half before release.
