45% Grenache, 30% Mourvèdre, 20% Merlot and 5% Cinsault from the original vineyard of the Carmelite monastery 5 km from Palette. Vinified exactly like the Palette rosé, which is to say, partial whole cluster, fermented in barrique and foudre (12 hl) with no malolactic and relatively long lees ageing. The Rougiers do not consider this Vin de Pay a “second label” but a wine of equal quality from a distinct terroir.

Château Simone is a legendary estate in Provence, France, that has been managed by the Rougier family since 1830. Situated just outside Aix-en-Provence, this historic property represents the heart of the tiny Palette AOC, an appellation the family helped establish in 1948. Defying the regional trend of quick-to-market rosés, the winery utilizes ancient limestone soils and a unique microclimate to craft deeply complex, remarkably ageworthy red, white, and rosé wines. Their traditional vinification takes place in 16th-century cellars originally dug by monks, yielding highly sought-after bottles prized by top restaurants worldwide.
