"Tenth generation vigneron Fabien Cazé isolated 2.66 hectares of his family’s holdings for his own small and ambitious project under the label Champgne Cazé-Thibaut. With a hands-on approach in the vineyards (certified organic since 2018), and a hands-off approach in his underground cave (slow and cold native yeast fermentations), Fabien is producing precise, terroir-transparent wines from the villages of Châtillon-sur-Marne and Vandières on the western side of the Vallée de la Marne. A recent inductee into the prestigious and progressive group of Champenois known as Terre et Vins, Fabien is developing a following that will grow and strengthen in the years to come.

"Naturellement" is sourced from From 6 small parcels of vines in Châtillon and Vandières on the western edge of the Vallee de la Marne. Parcels are worked without the use of any herbicides or pesticides. Fabien “scratches” or hoes the soils preferring to minimally disrupt the soil structure and plant life. From pruning to harvesting all vineyard work is done by hand and each parcel is harvested separately. Harvesting occurs when the grapes are at optimal ripeness."

Grapes are pressed slowly and gently and all juice is moved by gravity into steel tank. Once each parcel is pressed, half of the juice is transferred into a combination of 228, 350, and 330L barrels for a long, cold and slow native yeast fermentation in Caze's underground cellar. Aged sur latte for 24 months, bottled as Extra Brut with a dosage of 1g/L.
