Based in the Vallée de la Marne, Champagne Cazé-Thibaut is led by tenth-generation winemaker Fabien Cazé, who works just over two and a half hectares of vines selected from his family's holdings. The estate is committed to environmentally conscious, organic viticulture and traditional craftsmanship, with all vineyard work done by hand. A proponent of long lees aging, Fabien produces precise, elegant, and terroir-transparent Champagnes using native yeasts and old oak barrels. His minimalist winemaking has earned him a place in the prestigious "Terre et Vins" collective, alongside other notable producers.
The Crayère Brut Nature is crafted from a blend of Pinot Meunier (55%) and Chardonnay (45%) grapes, sourced from specific parcels on the right bank of the Marne, near the villages of Châtillon-sur-Marne and Vandières. This bone-dry, mineral-driven Champagne reflects the purity and character of its chalky terroir, with no added dosage to mask its natural expression.
40% from 2021 vintage with 60% coming from 2018 and 2019.

Fermentation occurs with native yeasts in old oak barrels, where the wines undergo a long, slow primary fermentation in the cold underground cellars. The wine then ages for a prolonged period on its lees before disgorgement (11/23). Bottled as Brut Nature with no dosage.
