Notes from Cape Classics:

"Vins Auvigue remains a family estate today, spanning 33 acres and residing in the heart of the Pouilly-Fuissé appellation. It faces the majestic Roche de Solutré which is pictured on the labels of all of their wines. Five of the 33 acres have been farmed organically for over 20 years in the Mâcon-Solutré and Pouilly-Fuissé appellations. The estate, which boasts a lengthy, thriving history as both a producer and a vintner, has received worldwide recognition for its acclaimed Mâcon wines. Vines are cared for with minimal intervention and vigilantly monitored to ensure that the soil receives all it requires in as precise a timeframe as feasible. Grapes that do not stem from the estate are rigorously selected from the best plots in the Pouilly-Fuissé, Saint-Véran and Mâcon appellations. The vinification process is always adapted to the vintage. Additionally, French oak casks are utilized and the wines are lightly filtered before bottling to retain all of their elements, allowing them to develop prior to release."

The clusters are pneumatically pressed and the juice statically settled over a 12 hour period. The clear juices are then transferred to stainless steel for alcoholic and malolactic fermentation.
