"One parcel is in Nuits-Saint-Georges close to Vosne Romanée, the other in the Hautes-Côtes, in Villers-La-Faye. Both planted on deep clay soils. Practicing organic farming (not certified).
Ambient yeast fermentation and aging for 6 months in stainless steel tanks. SO2 added after malolactic fermentation."
