Frédéric Savart comes from a long line of winemakers and has been in charge of the domaine since 2005. Savart works almost exclusively with Pinot Noir from the Premier Cru’s Ecueil and Villers-aux-Noeuds in the Montagne de Reims. These terroirs produce rich textured wines that have become the house style. This ‘Bulle de Rosé’ is approximately 2/3 Pinot Noir and 1/3 Chardonnay with a small amount of still red Pinot Noir added. Polished aromas of sliced strawberries, raspberry compote and cherry pith linger over nuances of rose petal, wet stones, and phyllo dough. Compact and lively bubbles ride over a silky, rounded, vinous texture that’s marked with a persistent mouthwatering acidity that continuously refreshes the palate. The finish is dry and slightly savory with fruity notes once again appearing over subtle baking spices in the background. Racy, mineral forward, opulent and elegant, this ‘Bulle de Rosé’ is quite the dance.
