Since its inception in 2000, winemaker Cédric Bouchard and his domaine Roses de Jeanne had the foresight to embrace terroir-driven expressions of Champagne. Bouchard’s impact was immediate, and soon many began to join him in his philosophy of single vineyard, single variety, single vintage, and zero dosage Champagne. Today he now crafts 7 cuvées in this manner and continues to dramatically restrict yields and emphasize cooler second fermentations in the cellar to create a more vinous leaning style.
100% Pinot Noir from the .07 hectare lieu-dit of Le Creux d'Enfer. That's just a few rows! Made by the “saignée” method of crushing the Pinot Noir and running off the juice after several hours of skin contact to produce the classic rosé color (rather than adding a bit of still red wine). Extremely limited production.
