Ronco Severo is a winery that adheres to the philosophies of biodynamic viticulture and has embraced a non-interventionalist style of winemaking. The resulting wines are storytellers for their environment, and thanks to the estate’s aging regimen, they are allowed to fully express themselves upon release. The resulting work behind the scenes is why this is, perhaps, the finest bottling of Schippettino. Enticing aromas of black raspberries, blueberry compote, nasturtium, green olives, and cedar evolve from the glass. The acidity is vibrant, carrying with it a medium bodied silky feel that land on savory velvet tannins with a lengthy, peppery, slightly spicy finish with hints of salinity. This is a wonderfully balanced wine that displays incredible versatility for food pairings.
