"Taurasi is one of the most exciting, yet unheralded regions in Italy for bold red wines. Michele Perillo's cellar is in Castelfranci, in the south-east corner of the appellation, about half an hour away from the town of Taurasi. He sold his fruit to other wineries for many years, before bottling wine under his own label for the first time in 1999. Michele himself is modest, but his enthusiasm for his work is evident in the precision of his wines.

Michele only sources from the 2.5 acre parcel that he farms all by himself. A large portion of the Aglianco vineyard contains vines close to 100 years old, with the remainder around 35 years old. The site sits at an elevation of about 1500ft with clay soils of volcanic origin. The vineyards are farmed organically with minimal intervention."

Winemaking
The grapes are left to hang until late into October before picking to achieve optimal ripeness. After being destemmed and crushed the grapes go through a short three day maceration before fermentation. The fermentation is done without commercial yeasts. Fermentation is done in stainless steel and usually lasts 3 or 4 weeks. After fermentation, the wine spends 1 year in small neutral oak barrels and another year in large neutral oak casks. Another 8 years of bottle aging is done before release.
