Some of the oldest vines are in Raffault's one-hectare monopole called Champ Chenin, a particularly limestone-rich site on a hilltop right next to the celebrated Cabernet Franc \u003c\/span\u003e\u003cem data-mce-fragment=\"1\"\u003elieu-dit\u003c\/em\u003e\u003cspan data-mce-fragment=\"1\"\u003e Les Picasses. Like all Raffault vines, these are farmed organically and harvested by hand. The Chenin is gently whole-clusted-pressed for 3 hours; fermented with native yeasts in tank at cool temperatures; aged on its lees in tank, without malolactic fermentation and with occasional stirring; and bottled with a light, non-sterile filtration. Sulfur is minimal (2 grams\/hectoliter at press and at bottling).
