Pascal Doquet, ‘Coeur de Terroir’ Premier Cru Vertus 2009
Pascal took over from his father in 1995 and re-established the domaine under his name in ’04. Natural farming and a focus on the vineyards are paramount. He has old vine holdings in many of the greatest terroirs of the Côte de Blancs, including the prized chalky clay soils of the 1er Cru site, Vertus. The wine is a blend of 70% chardonnay with 30% Pinot Noir, all vinified and aged for an additional 11 months in neutral oak barrel. After bottling the wine was aged for 12 years sur latte before disgorgement! It’s a full-bodied Champagne from this site with leesy richness and stony length.
Marc Hebrart, ‘Mes Favorites’ Premier Cru Brut NV
Established in 1964, the Hébrart domaine has built a reputation as one of the finest producers in the Grand Vallée. Mes Favorites is composed of the Domaine’s favorite sites in Mareuil. Old vine and massale selections plantings of 75% Pinot Noir, and 25% Chardonnay. Malolactic fermentation on the lees in stainless steel, aged over 48 months sur latte. The nose is dominated by the Pinot Noir with hints for red fruit, Mirabelle plum, and a deep savory character. On the palate it has weight at first, then a vibrant chalky note rides in on the Chardonnay. A favorite at the shop!
Vilmart & Cie, ‘Cuvée Rubis’ Brut NV
Vilmart is unique in that it is one of the first estates to work exclusively with estate owned vines…. since the late 19th century! The house style here calls for wines to be fermented and aged in oak barrels of various sizes; and never undergo malolactic fermentation. Cuvée Rubis is a 90/10 blend of Pinot Noir and Chardonnay, this is a vinous-forward style with 15% of the Pinot Noir appearing as a still red wine. Aromas of fresh raspberries and cherry pith, with floral undercurrents of lilacs and dried roses. The lively acidity gently carries soft bubbles for a rounded silky texture. Finishes crisp and dry with chalky floral tones.
