The Mas del Périé/Fabien Jouves estate is a 6th generation property located in the Causses plateau, on the highest slopes of the Cahors appellation. The vineyards sit atop the hills of Quercy at over 1,100 feet. The high elevation guarantees low nighttime temperatures, which partly explains the freshness and vivacity of the wines. Fabien Jouves assumed the winemaking duties in 2006 and quickly began converting to biodynamic viticulture. Opting for spontaneous fermentation, Fabien’s employs a non-interventionist vinification philosophy. Additionally, various vessels are used to age the wines: concrete tanks, barrels, large foudres, and amphorae depending on the wine’s personality in a given vintage. ‘Les Escures’ comes from nearly 30-year-old vines Cahors. Highly aromatic with darker tones of blackberries, currants, black peppercorns, violets, tarragon, and iron. The acidity races through a brooding mineral, silky-inky texture before its deceptively full body descends on a mild velvety tannin touch with a peppery, herbal, and slightly smoky finish. Wonderfully shows off a finessed side of Jouves not always apparent in his other more playful cuvées.
