The name "Les Horées" derives from Greek mythology. Catharina Sad (owner/winemaker) says there are many different interpretations, but she describes "Les Horées" as marking the change in seasons. The goddesses of the seasons are called "Horae" (hours).

⅓ de-stemmed but with skin contact for 5 days in 50L crates; ⅔ directly pressed as whole clusters in basket press. Indigenous yeast fermentation with no sulfur added until after malo. Aged for 6 months in 350L older oak barrels.
