Notes from Le Comptoir de la Cité:
"Booming in the 19th century, the tannery was a workshop where leather was made. Around 1880, the great period of textiles that marked Carcassonne life ended, but certain industries linked to it lasted longer, among them leather work. The so-called "tannery" plot, from which the grapes for this cuvée are extracted, is attached to an old tannery. A place steeped in history which has seen our grapes ripen for generations.
To be enjoyed with roast beef, game or cassoulet.
Serve between 17 and 18°C."
