Winemaker Richard Fouquet represents the 5th generation at the helm of this family run domaine that was established in 1885. Since nearly 75% of their fruit is sold to the Grandes Marques Champagne house Laurent-Perrier, their output is small but mighty. They mainly work with the best parcels from their vineyards in the Côte des Blanc Grand Cru’s of Cramant and Chouilly and also work with outstanding Pinot Meunier vines in Mardeuil near Epernay. His meticulous attention to detail and cellar work is that of a winemaker with something to prove. ‘Tethys’ is sourced from old vines in the chalk rich soils of Grand Cru’s Cramant, Chouilly and Oiry. Classic aromas of green apple skin, brioche, lemon zest, seashells and brioche entice towards a supple yet lively palate with mouthwatering acidity persisting through a mineral-rich texture. The bubble are compact, lively yet finessed and dance towards a nearly bone dry chalky finish with slight hints of almonds and saline. Inevitably, this much talent won’t last at its current price point. Tremendous clarity and balance, this ‘Tethys’ cuvée is stunning and captures Fouquet’s youthful energy.
