Notes from the producer:

"Grandes Pagos Gallegos is a group of three, independent Galician wineries making wine, both white and red, from indigenous Galician varieties, such as Albariño, Godello, Treixadura and Mencía. Our wineries are located in the DOs of Rías Baixas, Ribeiro and Monterrei. They share the same winemaking philosophy, which is very respectful of the environment and the best traditions of our ancestors. We do not use any herbicides or systemic fungicides. We pick all our grapes by hand and have a strict control of temperature in the winery during fermentation. We also allow our white wines to rest on their own fine lees for different lengths of time after fermentation, prior to bottling. We choose sites with the best solar orientation for our vineyards, many of which are in historic locations and usually on slopes."

Winemaking
They are manually harvested and placed in 15 kg boxes. Grapes are selected in the vineyards. Once the harvest arrives at the winery, it is refrigerated in a cool chamber at 5ºC. After a second selection of grapes on a vibrating sorting table, they are destemmed by hand. Then they go through cold maceration for two weeks, and after the wine is devatted, it is left to ferment in 500-litre French oak barrels. When the alcoholic and the malolactic fermentation have finished, part of the wine goes through static ageing in stainless steel deposits. The other part is left in fine grain French oak barrels for 7 months. The wine stands for at least three months before it is launched on the market.
