The Premier Cru for true Chablis lovers. Vaudevey is a cool terroir with a rocky topsoil that gives the wine a wide range of lively and mineral aromas. Les Vaudevey are located in a cool and narrow valley. Sun appears in early morning and lasts until mid-afternoon. The ripening of grapes is slow, which helps aromas to concentrate and acidity to be kept.

Hand-harvested and hand-sorted, whole cluster-pressed in a pneumatic press, must settles for 12 hours at 50° F to 54° F in large vats then ferments for 3 weeks - 60% in stainless-steel vats, where the temperature gradually increases from 61° F to 66° F and the rest in French oak barrels, 15% is new. Minimal filtration is used to preserve the natural character of the wine.
