"Les Blanchots is a unique terroir made of a layer of white clay on Kimmeridgian limestone with ammonites. This is the ideal combination to keep the right amount of water for roots. The South-East exposure allows slow ripening and favors aroma development. Blanchots is delicate, silky and shows its charm after 5 years in bottle. At peak after 10 to 12 years."

Hand-harvested and hand-sorted, whole cluster-pressed in a pneumatic press, must settles for 12 hours at 50° F to 54° F in large vats then ferments for 3 weeks - 60% in stainless-steel vats, where the temperature gradually increases from 61° F to 66° F and the rest in French oak barrels, 15% is new. Minimal filtration is used to preserve the natural character of the wine.
