
Pascal’s parcel is in the lower part of the vineyard, at the very north end, up against Les Plantes and Clos des Ormes. It is a stony vineyard, with plenty of angular gravels and cobbles in the red clay soils. Pascal says, “the stony soils provide excellent drainage. In summer, after the last plowing, and when the rain has ‘washed’ the surface of the soil, one has the impression that the vineyard has been paved with white rocks.”
50% whole cluster, ambient yeast ferment, aged in oak barrels (about 40% new) for 12 to 18 months. Since 2016, very moderate sulfur additions: none during vinification, a little during élevage and before bottling, for a total of 15 to 20 ppm.
