COS is the benchmark producer in the Vittoria region and among the most highly regarded in all of Sicily. The Cerasuolo di Vittoria bottling is arguably the top cuvée from this estate. Drawing from that inspiration the ‘Pithos’ offers an opportunity to sample the Cerasuolo di Vittoria through an amphorae lens. Pristine aromas of fresh raspberries and mandarins emanate from the glass. The prickly acidity carries with it a lip-smacking juicy texture that ease into a mild dusty tannic with complex herbal, earthy, salty finish.

Fermented and aged for 6 months in terracotta amphorae followed by 2-3 months in concrete tanks. Additional 3 months aging in bottle before release.
