"Sergio’s Greco Bianco “Liberaisensi,” which loosely means “blindfolded,” or “tasting blind” is macerated on its skins for two to three hours before pressing and naturally fermenting (max temp of 20°C) and aging in steel prior to a light filtration before bottling. Total SO2 here is 35 mg/L—quite low for a white wine, but more stable at this level because of the skin’s contribution to antioxidation and extremely clean fruit upon picking. Because it doesn’t go through malolactic fermentation, it is filtered before bottling."
