"There is a scant amount of Chenin Blanc grown in Chinon compared to Cabernet Franc. Some of the oldest vines are in Raffault's one-hectare monopole called Champ Chenin, a particularly limestone-rich site on a hilltop right next to the celebrated Cabernet Franc lieu-dit Les Picasses. Like all Raffault vines, these are farmed organically and harvested by hand. The Chenin is gently whole-clusted-pressed for 3 hours; fermented with native yeasts in tank at cool temperatures; aged on its lees in tank, without malolactic fermentation and with occasional stirring; and bottled with a light, non-sterile filtration. Sulfur is minimal (2 grams/hectoliter at press and at bottling). Its production is miniscule."

Slow, whole-cluster direct press. Fermented and aged on the lees in with regular bâtonnages in stainless steel for six months. Two grams of S02 are added per hectoliter at press with an additional two grams at bottling.
