High density of planting (8 500 feet/ha). The soils are plowed and the vines are nourished by the previous year's cuttings, by organic compost and by powdered limestone (to neutralize the soil's acidity).
Human intervention comes into play several times during each season for de-budding, trellising, leaf-thinning.
Tasting notes: Brimming with red fruit and pepper, this highly aromatic and enticing gamay has supple tannins and just enough granitic backbone to give it depth of character and ageability. Though best drunk within a few years, we have thoroughly enjoyed 8-10 year old bottles from some of Stéphane's earliest vintages, especially when paired with the local charolais beef. "
