Côte de Feule is the most recognized terroir in Pupillin, located at the heart of the appellation. Moderate slope (26% average incline), south-facing. 390m altitude. Located in what was once a stone quarry, the soils are shallow and rocky, composed of iris-colored Triassic marls.
Destemmed with crible, ambient yeast fermentation in stainless steel or fiber tank with no added SO2, total maceration lasts 12 to 16 days. Pump-overs only, vertical oak pressing. Aged 6 months in tank, no fining, no filtration. Low SO2 after malo and at bottling.
