With most of their vineyards residing in Ambonnay, Rodez specializes in opulent Pinot Noir based Champagne. Influenced by stints in Alsace, Rodez began farming his vineyards organically and eventually converted them all to biodynamic. Rodez was the former oenologist at the historic Krug, where he acquired his penchant for blending and greatly influenced his winemaking. The house style here is regularly non-malolactic, mostly barrel fermentation and aging, and a heavily on reserve wines; often blending anywhere from 5-10 different vintages in his final cuvée. Needless to say, these are wines of deep complexity. This Brut Rosé is a blend of Pinot Noir and Chardonnay: 40% of the blend is Pinot Noir that has spent time on the skins, 30% Pinot Noir direct press, and 30% Chardonnay. Just over half of the blend is comprised of reserve wines, with the same amount undergoing malolactic fermentation. Finally, most of the wines are fermented and aged in small oak barrels. This intense vineyard and cellar work manages to achieve a striking balance between racy acidity, exuberant bubbles and a hefty vinous profile without the aid of a large dosage. Limited Addition is the project of Master of Wine Bree Stock and her husband Chad—working with more than twenty different varieties across organic and low-intervention sites, with a focus on later-ripening grapes that hold acidity even in warm years. Pink Crush (sometimes labeled Rosé Crush) is a co-fermented blend of roughly 30% Dolcetto, 30% Pinot Noir, and 40% Gamay—the Dolcetto from cool-climate Jubilee Vineyard up in the Eola-Amity Hills. Situated just outside Aix-en-Provence, this historic property represents the heart of the tiny Palette AOC, an appellation the family helped establish in 1948. Defying the regional trend of quick-to-market rosés, the winery utilizes ancient limestone soils and a unique microclimate to craft deeply complex, remarkably ageworthy red, white, and rosé wines.
